What is vinification?
Wine is defined as the product resulting from the fermentation of fresh grape juice or must.
The vinification (or winemaking) process therefore essentially consists of the transformation of the grapes’ natural sugars, by yeasts present on the skin of each grape. To put it simply, these yeasts “consume” the sugar and convert it into alcohol (we talk of “alcoholic fermentation”) and carbon dioxide gas (this is why the vinification vats “bubble”).
Throughout the vinification process, each winemaker expresses his individual talent, as he nurtures his raw material and helps it evolve into a vast and original ensemble of aromatic hues.
